the oven was calling to me...
i couldn't go another day without doing a little baking!
i looked around my kitchen,
and a lone, sad-looking brown-spotted banana caught my eye.
i instantly thought
"banana muffins!"
...a perfect breakfast or snack.
but when i saw that my tried and true muffin recipe
called for two over-ripe bananas
(and other than my squishy one,
all the rest of my bananas were looking extremely green).
i realized i could easily adapt the recipe
to make banana-blueberry muffins.
the recipe is highly modified from the original betty crocker recipe

i grew up with her!)
because i have a tendancy to bake like i cook
(with wild abandon)
so i encourage you
(if you try these muffins)
to do the same!
also, i did half the muffins with greased bottoms,
and the other half in cute silicone muffin cups
to see which way would come out better.
the muffin cup ones are definitely cuter!
blueberry-banana muffins
1/2 cup milk (add more at end if necessary)
1/4 cup vegetable oil
(i used melted margarine because i had no veggie oil)
1 large egg
2 cups flour (i used 1 1/2 cups white, 1/2 cup whole wheat)
1/2 cup brown sugar
2 tsp baking powder
1/2 tsp salt
1 medium mashed very ripe banana
1/2 cup blueberries
1.
heat oven to 400C
grease bottoms only of 12 medium muffin cups with shortening
(or use paper baking cups)
2.
beat milk, oil, banana & egg in large bowl with fork
stir in flour, sugar, baking powder & salt all at once
(at this point, add more milk if mixture is much too thick...
it should be like thick pancake batter, not dough)
fold in blueberries
3.
divide batter evenly between muffin cups
bake 20-25 minutes or until golden brown and lovely!
if baked in greased pan, let stand 5 minutes before removing
(if baked in muffin papers, remove from pan immediately)
4.
enjoy!
